Their deep-dish pies feature a rich, focaccia-style dough that is layered with mozzarella before baking for maximum crunch and caramelization, and the best word for the toppings is "generous."
Founded in the Chicago suburb of Lincolnwood by Lou and Jean Malnati in 1971, Lou Malnati's represents the beginning of a decades-long deep-dish legacy. Although the restaurant has expanded to dozens of locations throughout Chicagoland and beyond, the original Lincolnwood location is still a special place to experience the classic deep-dish pie (or a thin-crust alternative).
With its well-worn dive-bar ambiance, Pequod's Pizza is a Chicago favorite that's been serving pizza in the Lincoln Park neighborhood since 1970. Their deep-dish pies are known for their light, airy dough and perfectly caramelized crust. Personal pan-sized pizzas are available for solo diners.
If deep dish isn't for you, then Chicago tavern-style might be right up your alley. Originally developed in local bars to encourage drinking, this thin pizza has an almost cracker-like crust, cut into squares with toppings spread from edge to edge. Pat's Pizza is the continuation of a pizza tradition started by Nick Pianetto Sr. at the original Pat's Pizza on Sheffield Avenue in 1950. The newer Clark Street location along Printer's Row in the South Loop makes super-thin, tavern-cut pies with the perfect combination of crunch and chew. Pat's is especially known for its next-level sausage pizza.
